Polish Kielbasa in Tomato Sauce Print E-mail
A perfect dish for unexpected guests.

You are in panic! Somebody is knocking at your door! Family? Friends? It is clear – unexpected guests. As in every Polish family, we know that “the guest home, the God is home” Rules of Polish hospitality are clear: you have to serve your guest with food and drink and celebrate their visit.

Of course, when it is an unexpected visit – the time for preparation is important and availability of products too.

Nothing simpler: we advise to prepare “Polish Sausage in Tomato Sauce“ – all you need are tomatoes purée and some sausages.

The rest – I am sure – is already in your fridge.

Tomatoes puree and Polish sausage you can buy in most of the corner shops. We recommend you “mysliwska” (hunters’ sausage) or Krakow sausage.

Both well smoked and hard.If you prefer something more soft, not so smoked, but with lots of garlic, buy some farmer sausages.

Now you are nearly ready. All the preparation of the dish will take you less than 30 minutes.

INGREDIENTS* 50 gr (2 oz) lard or butter
* 25 gr (1 oz) onion, peeled and finely chopped
* 50 gr (2 oz) flour
* 200 ml (7 fl oz) beef stock or water
* 3  tablespoons tomato purée or 1/2 cup fresh tomato sauce
* salt, pepper and sugar to taste
* 200 gr (7 oz) Polish sausage (kielbasa)

PREPARATION

Melt the lard or butter and add the onion. Cook gently until golden, add the flour and cook 1-2 minutes longer.

Gradually add the stock, mixing carefully to avoid lumps, and bring to a boil.

Add the tomato purée (or fesh tomato sauce), salt, pepper and sugar.

Skin the sausage, cut into big cubes and add to the sauce.

Simmer the sauce for a few more moments so that the flavours blend and the sausage is heated through.

Serve with mashed potatoes and sauerkraut.
